Ethiopia, Deri Kidame - Methodical Coffee

This experimental Ethiopian lot pushes boundaries with carbonic maceration, a technique more often found in winemaking. At Tracon’s Deri Kidame Washing Station, coffee cherries are sealed in CO₂-filled tanks for 72 hours before drying slowly on raised beds. The result is a cup alive with grape, strawberry, and guava notes — fruit-forward, clean, and complex.

Tracon, a family-owned Ethiopian exporter, manages every step from fermentation to milling in Addis Ababa. Their innovative approach supports local farmers with training and early pre-payments, ensuring both stability and quality.
