This Colombian Caturra varietal undergoes a meticulous double anaerobic fermentation process: first in water with controlled pH and added yeast, then depulped and placed in sealed bioreactors for a second fermentation. The result? A delicate, tea-like body with layered notes of stone fruit and berries.

Catw (pronounced cat-oo) means “small,” a nod to the Caturra varietal’s compact size and high yield. But the flavors here are expansive, with elegance and nuance that showcase why Colombian coffees are among the world’s most experimental.
